Eva's Favorite Low Carb Salad
I'm a fan of the low carb lifestyle. I don't want to say I really stay slim on this diet but I feel better & I know for a fact I eat more unprocessed foods if I practice it.
This is one of my favorite quick salads....& again, I'm not showing this off as a 'diet' meal, obviously there's a glass of wine pictured with my salad...but red wine is healthy in moderation & so it this salad ;) Here's what's in it:
Raw Spinach (try it it's better than you think & it's mega healthy)
Fresh tomatoes, cut like you like
Onions (optional, red are pretty but I didn't have any)
Chopped Walnuts
For the dressing I mixed plain yogurt with some crumbled blue cheese...buttermilk works or you can crumble the cheese in the salad & add some olive oil for a total low carb thingy. If you don't like blue cheese, feta is an acceptable sub. Pepper to taste, I pepper everything, ha ha. Enjoy!
